This past month has flown by. It’s time for another Adopt a Gluten-Free Blogger post. This month I’m adopting Brittany from Real Sustenance.
Brittany cooks dairy and gluten-free and tries her darndest to include many other -frees as well. It’s a great site to look at if you have many allergies/intolerances.
I had a hard time choosing what to make as she has quite a list of recipes, including an extensive dessert section. :) I was tempted by this Chocolate Espresso Angel Food Cake, but Mike had to be the voice of reason and remind me that angel food cake is not a healthy lunch.

After more searching, I decided on this Chana Masala recipe. We both love Indian food. And we especially love chickpeas. Also, this recipe is really easy to put together. Throw beans, tomatoes and seasonings in a pot, cook, enjoy tasty food half an hour later. The only change I made was using ground cumin for the cumin seeds as I didn’t have any.

Chana masala is usually served with white basmati rice. I used brown basmati. I try to stick to brown rice since it has more nutrients. And brown basmati rice has a nice nutty flavor.
Don’t skip the fresh cilantro. (Unless you’re one of those people that has the tastes-like-soap issue.) It adds that extra pop to the dish.
