  6. Some amazing stuff here this week! I almost hate to call any out because I don’t want the others to feel slighted, but the broccoli cupcakes with carrot frosting are super clever. ;-) The truth is that there’s not much I’d turn down in this roundup–wow.

    Thank you so very much for including my Mascarpone Filled Cannoli recipe. Though mascarpone (sweetened Italian cream cheese) is not vegan, and may not meat all vegetarian diets, what may make a good dairy-free substitute is mixing Tofutti Better Than Cream Cheese (http://www.tofutti.com/btcc.shtml) with a bit of lemon juice.
