For this go-round of Adopt of Gluten-Free Blogger I chose Alta of Tasty Eats At Home. Alta keeps popping in over here with nice things to say about my recipes, so I figured it’s my turn to gush over hers.
It was fun scrolling through her site trying to choose which recipe to make. She’s quite an adventurous cook. She participates in both Daring Bakers and Daring Cooks. Plus she has a Kids in the Kitchen series where she cooks dishes with her step-kids, and you’d be surprised what they want to try sometimes: Turtle Soup or Braised Sea Cucumber anyone? Alta does have quite a list of vegetarian recipes too though. Despite the heat, I decided to fire up the oven to make this Zucchini and Sun-Dried Tomato Casserole. Zucchinis are plentiful right now, and I’m a sucker for sun-dried tomatoes.

I loved all the fresh herbs, especially the fresh sage. There were mouthwatering smells coming out of the oven. I did use regular cheddar cheese instead of Daiya. I think the casserole would also be great with fresh mozzarella on top. Or maybe gruyere.

My almond topping did not end up as crumbly as Alta’s. Maybe it has to do with the brand? Either way, doesn’t really matter much; it was still a tasty addition on top. Mike said he really enjoyed it.

I knew from the title that was Alta’s recipe! I remember drooling over it before. LOL You did very well with this casserole; it looks sooo good. I still have some sun-dried tomatoes on hand and will have to pick up some zucchini. ;-) Lovely adoption!

Alta: It really was fun trying to pick which recipe. I was pretty excited about the nori bowls, but Mike pretty much hates nori and I do try to make things he’ll eat. This worked out great though. He used to not be much of a zucchini fan either, but no problems with this recipe.

Oh wow, love the pics! I love zucchini, I think I’d have to say it’s my fave roasted veggie, and so versatile! Maybe my picky boys would eat it with the cheese on it??? lol!
Heh, you can always try and if not, you get the whole casserole to yourself. (That’s not a bad thing.)
