Grapefruit Champagne Slush
- 3 cups freshly squeezed grapefruit juice (4 large grapefruits)
- ½ cup corn syrup
- ¼ cup white sugar
- ¾ cup chilled dry champagne or sparkling wine
- Combine the grapefruit juice, corn syrup, and sugar in a large bowl. Whisk until the corn syrup and sugar dissolve. Place in the refrigerator until cold.
- Stir the champagne or sparkling wine into the grapefruit mixture. Pour into an ice cream maker and churn following manufacturer’s instructions. Remove and immediately serve or freeze.
Makes 1 quart
Right out of my ice cream maker the slush was not quite frozen all the way — think frozen margarita or daiquiri texture. If you freeze it a few hours or overnight, you’ll have much more defined ice crystals, more like shaved ice texture.
If you don’t have an ice cream maker, make the base, then follow the instructions in the Cardamom Rum Coffee Slush recipe.
