Yeasted Pancakes
- ¾ cup sorghum flour
- ¾ cup millet flour
- ¾ cup buckwheat flour
- ¼ cup tapioca starch
- 2 tablespoons sugar
- 2 teaspoons dry active yeast
- ½ teaspoon salt
- 2 cups warm soymilk
- 4 tablespoons butter (half a stick), melted
- 2 large eggs, whisked
- vegetable oil (for greasing the pan)
- Place all the flours, starch, sugar, yeast, and salt in a large bowl. Whisk to combine. Add the milk and stir to combine. Cover with a towel and let sit overnight.
- In the morning, stir in the butter and eggs. Set a griddle between medium-high and medium heat. Let the griddle heat up for a few minutes. Place a small amount of oil onto a towel and rub a light layer all over the griddle.
- Spoon pancake batter onto the griddle. Cook approximately 3 minutes, until lightly browned. Flip and cook 1-2 minutes. Remove from the pan. Repeat with remaining batter. Serve.
Makes 18 pancakes
I find that subsequent batches of pancakes need slightly lower heat, so I turn the heat down to medium. It’s probably easier to err on the side of lower heat and a longer cooking time than higher heat and burnt pancakes.

I’ve always heard that yeasted pancakes are the very best kind, but I’ve never had one. They look wonderful, Kalinda!

That’s interesting, I don’t think I’ve heard anything specifically about them before. I posted a yeasted waffles recipe some years ago which I love, and resolved to make yeasted pancakes some day. Finally got around to it.
These look delicious! And what a perfect Christmas Eve breakfast for my family :) I love that these can be prepared the night before and cooked in the quiet of the morning before the wild festive rumpus begins :)
It is nice to not have to measure out all the flours in the morning.

Honestly, neither had I until I decided to make them. I am a big fan of yeasted waffles though. I figured pancakes would be good too.
Oh wow! I love pancakes but hate flipping them (although I’m getting better). This is so great for when I wanna through my spatula out the window. They look so fluffy and dreamy.
I don’t know if it was the pancakes or my spatula, but I did have some flipping antics with these pancakes. Namely, they tended to go flying. One cooked pancake ended up in the bowl of batter. Oops.
